So it’s been a fairly typically Wimbledon week, a bit of sunshine and a lot of rain. Just in case you forgot it is actually July now so time to celebrate the Summer.
Now I know today is 4th of July so I should be doing something USA themed. But I have decided to throw caution to the wind and do the most British Centric post I am yet to do.
Inspired by a trip to Wimbledon and of course the bad weather I have decided to celebrate summer with some Scones and Strawberry Jam. I even created a mood board, just to get you… well… in the mood.
After walking through the supermarket I was shocked to see how many different types of scones were for sale. Now I am ok with people buying most things, but scones are sooo easy to make that unless you are serving to a large group of people you really should have a go at making them yourself. I promise you, you won’t regret it.
For now I will share a basic recipe that I have always used and has turned out to be successful. There are a lot of hints and tips on getting the perfect scone and I am sure you can streamline this recipe, add extra hints and tips but you don’t really need to. You just need to make something that resembles the look and feel of a scone and tastes like one.
This is in no way the perfect scone recipe, but you could do a lot worse!
Scones
8oz Self Raising Flour
2oz butter
1oz Caster Sugar
pinch of salt
5floz milk
Method
- Preheat your oven to 220C
- Add the flour and salt to a bowl and then rub in the butter
- Stir in the sugar, then using a knife stir in the milk slowly cutting across the bowl until everything is combined
- Once you have a soft dough turn it out on a lightly floured work surface , shape into a ball and then lightly press down to flatten until its about 2cm’s thick
- Use a floured cutter to cut out your Scones and place them on a baking tray
- Knead the remaining dough into a ball again and repeat process until all the dough is used
- Bake in the oven for 12-15 mins
- Remove and leave to cool, serve with Butter and Jam, or Cream and Jam, or Fresh Strawberries or whatever you fancy!
How exciting is that? It all feels very ‘ladies that tea’!
