Friday Treats: Vegan Friendly Flapjacks

Now I have been going on about baking for ages whilst simultaneously jabbering on about being healthy etc. etc. yadda yadda yadda, Shut up already and give me some deliciously healthy recipes I hear you shout!

Well I know I mentioned Vegan Flapjacks a few days ago and I didnt want to disappoint so I thought I would offer up the recipe as a possible solution to your weekend treat predicament. ( Here I am  of course presuming everyone likes to treat themselves at the weekend)



Now I know you will look at the sugar content and tell me they are not healthy… pst…. Come closer …( I KNOW THEY ARE NOT HEALTHY BUT I LIKE PRETENDING BECAUSE THEY ARE SO YUMMY) ( and they’re not that bad anyway!)

hmm…. So… anyway. It all got a little intense there. Backing away from the scary healthy vs not healthy chatter I might as well share the recipe with you. Although, not before telling you that before long I will definitely post something that is 100% unequivocally good for you. Il Padrino From Scratch, formerly known as ‘the Father’, is having a ‘No Carb’ moment and has requested that I spend some time searching out an appropriate breakfast menu that doesn’t mean he has to eat Eggs and Bacon or Fruit and Yogurt everyday. Not getting to cocky but I think I may be close to solving this so I fervently exclaim “Challenge Accepted!’

Back to Fridays Treat, Vegan Friendly Flapjacks

Ingredients

18oz Oats

6oz Demerrara Sugar

8 tbsp Golden Syrup ( make sure you check you syrup is vegan friendly as bizzarly some are not)

8oz Pure Sunflower spread

Method

  1. Preheat the oven to 180 c
  2. Melt the Butter, and sugar in a pan over a low heat
  3. Add the golden syrup and mix together
  4. Remove the pan from the heat and add the oats
  5. Stir until everything is fully combined (It will seem like you have too many oats but trust me you don’t, you just need to stir)
  6. Transfer mixture to a greased and lined baking tray
  7. Bake in the oven for about 15-20 mins until golden on top
  8. Leave to cool in the baking tray then slice into squares once cooled and munch away
