Pea and Mint, natures ultimate combo, so sweet, so refreshing, so simple. What a perfect summertime lunch or supper. And even better british peas are in season so you can have freshly picked soup! It’s like waking up in a fairytale where summer is actually real and everything tastes delicious. I new I wanted to do something seasonal, and yesterday I was stuck for lunch and decided to make something out what I already had in the house. You can imagine my joy when I realised I had ingredients for pea and mint soup. If you can’t imagine – let me know put it this way I was pretty darn happy.
The best things about this soup – it is so quick to make. Really you have no excuse to buy this, it’s as quick to make it and when you do it will taste even better. Just watch out for blending disasters ( I managed to splatter this soup everywhere – luckily I have green walls in my kitchen so I think it blended in – note to self, buy a new hand blender).
So rather than waffle on I will just give you the recipe and let you get on with it. Just be careful when blending
1 Onion chopped
1 Clove Garlic – finely chopped
2 Stalks Celery – chopped ( doesn’t celery just make everything taste better – its the ultimate secret ingredient)
1 Potato peeled and chopped ( this isn’t essential but it will add more body – you could also use parsnip – in fact that would be yummy – do that)
600ml Vegetable Stock
300g fresh or frozen Peas
a handful of Mint chopped
1. Fry the onion, garlic and celery in a pan with some oil, let this soften.
2. Add in your potato and stir
3. Add the stock and leave to simmer for 15 mins
4. Add the Peas and Mint leave to simmer for another 5 mins
5. Remove from the heat and blend (carefully)
