Not always an easy combination, warming and healthy yes \u2013 you make soup, fresh and healthy \u2013 you make some sort of light veg dish. However the three combined always seems to throw me into somewhat of a muddle.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Nevertheless today I think I might have cracked it. Warm salad!<\/span><br \/>\n<span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> <!--more--><\/span><br \/>\n<span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> Revolutionary! ( well not really \u2013 but for me it was quite exciting as it&#8217;s something a rarely make)<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">And do you want to hear the even better news, it&#8217;s so simple, involves minimal cooking and was made entirely out of things I already had in my fridge\/cupboards. It&#8217;s the A star of all simple suppers.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">I know you are now keen to get your salad on so I wont stop you any longer. Here is the recipe.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><strong>Warm Winter Salad<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Ingredients<\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">4 carrots peeled<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1tbsp honey<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">olive oil<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1tsp fennel seeds crushed<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Mixed salad leaves \u00bd cup bulgar wheat<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1\/3 cucumber chopped into chunks<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">3 spring onions finely sliced<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">handful of hazelnuts crushed<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>for the dressing<\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 tbsp walnut oil<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">squeeze of honey<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 tsp red wine vinegar<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">juice of \u00bd orange<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">salt and pepper to taste<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><strong>Method<\/strong><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Preheat your oven to 200C<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Cut your carrots into thick batons place them in a oven proof dish and pour on honey, olive oil and fennel seeds. Mix until they are fully coated<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Place in the oven and leave to roast \u00a0for 40mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">In the meantime place your bulgar wheat in a pan of cold water and bring to the boil. Leave for 15mins and then drain.<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Combine all of the ingredients for the dressing and mix together<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Once the carrots are done combine all of the different elements adding in salad leaves, cucumber and spring onions.
