That has certainly been the case this week.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">The rain has been falling, it has been freezing outside and all I really fancy doing is cuddling up on the sofa with a cup of tea and warm toast. Unfortunately that is not a sustainable diet, so other options must be found to help sooth our souls as the wind picks up and the evenings grow dark.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">This week I decided to turn a classic summer dish, risotto, into a warming autumn treat.<\/span><br \/>\n<span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> <!--more--><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Really simple to make, delicious and warming. I really recommend it if you stuck for ideas for supper this week.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><strong>Kale and Sausage Risotto<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Ingredients \u00a0<a href=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/10\/dsc_0324.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-888\" title=\"Sausage and Kale Risotto\" alt=\"\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/10\/dsc_0324.jpg?w=199\" width=\"199\" height=\"300\" \/><\/a><\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">8 Sausages<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">300g Kale ( about \u00bd a bag)<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Enough Risotto rice for 4<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 Onion<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 Garlic cloves<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 Chilli<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 litre Stock<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 tin of Tomatoes<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">300ml Red Wine<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Fresh parsley<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Butter<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Parmesan<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Salt and Pepper to taste<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Method<\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Cut the sausages in half lengthways, remove skins and brown in a pan skin side down, after about 8-10 mins turn them over to brown on the other side<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Once browned remove from pan break up and leave to one side<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Slowly heat your stock in a pan<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Heat a pan and add a knob of butter, add the onions ( chopped) Garlic (chopped) and Chilli (chopped) and leave to soften<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Then add the rice, mix around until all the rice is covered in butter<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Add the wine and boil rapidly to reduce<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Add tomatoes and parsley and a dash of stock<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Leave this to boil down, then add another spoonful of stock, keep doing this for about 10 \u2013 15 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Next add the kale and the rest of the stock and continue to simmer for another 10 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Season with salt and pepper and add a grating of parmesan ( if you want to be really naughty you can also stir in another knob of butter which will add an extra richness \u2013 let your consciousness be your guide)<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">And that&#8217;s it, Simple, delicious and most off all comforting which on a cold and dark weekday night is my dream supper.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Happy Cooking!<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I am not sure when it officially becomes autumn, but for me it&#8217;s the change from craving light refreshing suppers to yearning for warming stews and rich flavoured delights.
