I know the whole point of non perishable food is that it can become part of loads of meals. But I just seem to be collecting half empty packets of loads and loads of things, I mean I have 4 different kinds of rice packets all half used. How annoying!<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">After reaching my limit of shoving more and more in the cupboard I have decided to start using it. In my mind this is a great challenge. You spend less money as you are using up rather than buying more, you get to be a bit inventive and play around with flavours and ideas. Oh yes and you get more cupboard space.<\/span><br \/>\n<span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> <!--more--><\/span><br \/>\n<span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> As there is no better time than now, today I decided to use up a bag of red lentils that have been hanging around for a bit longer than I want them to. \u00a0After exploring through my cupboards for other accompaniments I decided curried lentils, toasted pitta with yogurt on top was the way to go. Delicious!<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">SO here is my challenge to you , reach in the cupboards see what you have got hanging around and play ready steady cook \u2013 no time limit just make what you can with what you have. Leave a comment below and let me know how it goes.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Here is the recipe from my simple leftovers supper.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><strong>Curried Lentils<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Ingredients<\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Leftover lentils \u2013 I reckon about 200g<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">\u00bd onion ( leftover) thinly chopped<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 cloves garlic- chopped<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 chilli &#8211; chopped<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 tsp cumin<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 tsp ground coriander<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">\u00bd tsp fennel seed<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 tin tomatoes<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 tsp sugar<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">salt and pepper to taste<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">200ml water<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Method<\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Heat some oil in a pan, add the onion and soften<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Add the garlic and all the spices<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Add the lentils to the pan, stir and then add water<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Pour in the tomatoes, season and leave to simmer for 25- 30 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Serve with some toasted pita and a dollop of yogurt<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><a href=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/08\/dsc_0462.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-832\" title=\"Curried Lentils\" alt=\"\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/08\/dsc_0462.jpg\" width=\"490\" height=\"737\" \/><\/a><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">See what you can do with those pesky leftovers!<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Recently I have been getting more and more fed up with those half used packets of different foods shoved at the back of my cupboard.
