Stop blogging. Well Did you miss me? Hopefully.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">The reason for this silence \u2013 well quite simply I had a holiday. I know if you&#8217;re a &#8216;lifestyle&#8217; blogger you are supposed to blog everyday regardless of holidays. I know I probably should have kept you updated on all the wonderful food I was eating and making, but to be quite honest I just wanted a bit of a break and I am sure you appreciated it as well. <!--more--><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">That said I didn\u2019t go a whole two weeks with out eating I can promise you that. However I didn\u2019t really do much cooking. For the holiday I played the part of sue ( sous-chef in normal speaker) to my mum or my grandpa and without exception every meal I ate was delicious. So to catch you up I thought I would share a few of my favourites. As I say I was sue so I can&#8217;t take much credit but I can share.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">SO here goes my mini holiday segment I would like to title: <strong>Suppers with Grandpa<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><strong>The Menu<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Ginger and Soy Duck<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Apricot and Almond Victoria Sponge<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Mediterranean Chicken with Rice<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Lets start with the duck, I forgot to say I was in France for my Holiday so duck was top in my priority lists to have. As always it didn\u2019t disappoint. The inspiration for this came from a stock pile of stem ginger that me and my mum found stashed away in my grandpa&#8217;s larder. With four jars of the stuff we decided to use the syrup for the duck and pieces of ginger to make some pretty slapdash but satisfying ginger biscuits.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em><strong>Ingredients<\/strong><\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 duck breasts<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">6 tbsp Soy Sauce<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">6 tbsp Stem Ginger Syrup<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em><strong>Method<\/strong><\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Mix the soy sauce and ginger syrup together in a bowl<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Trim the fat of the duck and place in the fridge<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Add the trimmed duck to the sauce mix, cover and chill in the fridge for an hour<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Once the duck has been marinated fry the duck fat off in a pan<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Then add the duck ,skin side down, and fry for approximately 7-8 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Turn the duck over and cook for a further 7 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Meanwhile pour the marinade into a burn and heat until piping hot<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">To serve slice the duck and pour over reduced marinade<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><a href=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/08\/img_0776.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-813\" title=\"Duck with soy and stem ginger syrup\" alt=\"\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/08\/img_0776.jpg\" width=\"490\" height=\"365\" \/><\/a><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">My Grandpa loves victoria sponge and really wanted to make him one whilst I was out visiting. However with a fridge stuffed full of freshly made apricot jam it seemed a shame to do the usual victoria sponge. Instead me and my mum decided on an apricot and almond sponge. It was a really nice change and went perfectly with a cup of tea at around 4 in the afternoon.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em><strong>Ingredients<\/strong><\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">6 oz butter<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">6 oz caster sugar<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">3 eggs<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">3oz self raising flour<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">3oz ground almonds<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">3 tbsp Almond Jam<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Icing sugar for dusting<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em><strong>Method<\/strong><\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Preheat the oven to 180 Degrees<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Cream the butter and sugar together<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Whisk the eggs until light and fluffy<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Add the eggs and slowly add the flour<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Then add the almonds and stir until everything is combined<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Pour into round tins and bake in the oven for 30 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Remove from the oven and leave to cool<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Spread the jam on one cake and place the other on top and then dust with icing sugar<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><a href=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/08\/img_0770.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-814\" title=\"Apricot and Almond Victoria Sponge\" alt=\"\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/08\/img_0770.jpg\" width=\"490\" height=\"365\" \/><\/a><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Then finally my grandpa&#8217;s delicious mediterranean chicken. It is a food memory of holiday, simple, comforting and pure summertime.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em><strong>Ingredients<\/strong><\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 Chicken Breasts<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 clove of garlic<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 large or 2 small lemons<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1\/2 inch grated ginger<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1tsp cumin<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">5 tsp tumeric<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2-3 tbsps of olive oil<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em><strong>Method<\/strong><\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1. Chop chicken in to chunks and marinate for an hour in lemon juice, chopped garlic, olive oil, \u00a0ginger, spices<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2. Preheat the oven to 180 degrees. Place chicken in the oven and cook for approx 30 mins, stirring occasionally<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">3.
