Whilst for many this may be synonymous with the late night\/ early morning sobering up meal, for me the Chicken Kebab is summer on a plate &#8211;\u00a0it&#8217;s like having a barbecue without having to have the weather or outside space for a barbecue. The crispy chicken, the rich and flavoursome sauces: a match made in tastebud heaven.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">There are so many ways to serve a kebab and so many recipes to follow for sauces but I decided that as the brief was quick, delicious and simple that I would stick to the basics.<!--more--><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">So here is my Chicken Kebab and Three Veg Salsa with a fresh Chimichurri sauce.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Ingredients<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 Chicken breasts\u00a0<a href=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/07\/dsc_0200.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-769\" title=\"Chicken Kebabs with Tricolour Salsa and Chimichurri Sauce\" alt=\"\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/07\/dsc_0200.jpg?w=199\" width=\"199\" height=\"300\" \/><\/a><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>For Sauce<\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 cloves garlic<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Large handful of fresh parsley<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 red chilli deseeded and pithed ( unless you like it hot)<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1tsp oregano<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1tbsp Red Wine Vinegar<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Salt and Pepper to Taste<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>For Salsa<\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 tin of sweetcorn, or 2 corn on the cobs cooked and decobbed<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">A handful of edamame beans<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">4 tomatoes<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Method<\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Firstly leave your kebab sticks to soak in water for about 30mins before you make the dish ( not 100% essential but it will stop the wood from burning)<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Cut you chicken into cubes, push onto kebab sticks and place on hot griddle pan to cook, turning occasionally until golden on the outside<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">For the Sauce, place all the ingredients into a food processor or blender and blitz until combined<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">For Salsa, heat a small pan of boiling water, place uncooked edamame beans in and cook for 5 mins, remove from heat and drain. Then de-pod the edamame beans ( just as a note you could use broad beans, peas or any green veg you fancy here, I am just a little obsessed with edamame at the moment)<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Cut the tomatoes into chunks and mix with Edamame and Sweetcorn<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Then assemble your salsa, added your chicken kebab skewers\u00a0and finish off with some flavoursome and refreshing sauce<a href=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/07\/dsc_02031.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-771\" title=\"Chicken Kebabs\" alt=\"\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/07\/dsc_02031.jpg\" width=\"490\" height=\"325\" \/><\/a><\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">The perfect mid week supper; a simple dish that makes you feel like you could be having a late evening barbecue and looks like a rainbow ( well almost \u2013 let&#8217;s just hope there&#8217;s a pot of gold lurking somewhere).
