You know the sort, where you pull something together in a limited time, based on what you have in your house. I love doing this, as I always seem to find new recipes, exciting combos and usually wind up making something I have never made before.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">This week it came in the form of banana, chocolate chip and hazelnut loaf. I know banana and chocolate are a classic combo so I am not really doing anything too revolutionary, but I always use walnuts when baking banana bread or cake. So when I found I didn\u2019t have any in stock, but had a whole load of roasted hazelnuts, the choice was obvious \u2013 why go to the supermarket when I could use up what I had.<\/span><\/p>\n<p><!--more--><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">So that is exactly what I did.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">I also transformed my icing for this loaf by using goats butter. Recently I have been trying to cut down of the amount of dairy I am consuming, or looking for alternatives to cows milk. As a result I have a few goats milk products lying around the kitchen \u2013 one of which was this goats butter.\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">I was a bit nervous using it to make icing as I didn&#8217;t know how it would effect the flavour of the icing, but it turns out it was delicious. Another great discovery. (Apologies that I don&#8217;t have photos of this iced \u2013 I was rushing out the house and didn&#8217;t get time to take photos \u2013 Sorry!)<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">So when you are next stuck for something to bake, or just want to use up a few store cupboard ingredients and brown bananas \u2013 why not try your own adaptation of this.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"><strong>Banana, chocolate chip and hazelnut loaf<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"><em>Ingredients<\/em><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">6oz butter<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> 6oz caster sugar<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> 3 eggs<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> 3 ripe bananas mashed<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> 8oz self raising flour<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> 3oz chocolate chopped into chunks<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Icing<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">2oz butter<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> 4oz Icing sugar<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> 1tsp vanilla extract<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"> hazelnuts to sprinkle over the top<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"><em>Method<\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Preheat the oven to 180C degrees<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Cream the butter and sugar together<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">beat the eggs until they are light and fluffy and combine into the creamed butter mix<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Add most of the flour \u2013 leaving a little aside to add later<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Next mix in the mashed banana and add the rest of the flour<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Stir in the chopped chocolate, or any other store cupboard finds<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Pour into a loaf tin and bake in the oven for 35 mins or until fully cooked ( to check simply Insert a kebab skewer or another sharp object into the cake \u2013 if it come out clean it is cooked \u2013 if not leave it another 5 mins)<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Remove from the oven and leave to cool<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">For the icing, mix the butter and icing sugar together until creamy<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Add the vanilla extract and a dash of water if needs be to loosen the cake<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">If the icing is too runny, a bit more icing sugar, if it is too solid, add some more water<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\">Remove your loaf from the pan, Ice your loaf and then sprinkle your chosen nut on top!<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: small;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1814\" alt=\"Banana Loaf 2\" src=\"http:\/\/www.suppersfromscratch.com\/wp-content\/uploads\/2013\/06\/Banana-Loaf-2.jpg\" width=\"600\" height=\"399\" srcset=\"https:\/\/www.suppersfromscratch.com\/wp-content\/uploads\/2013\/06\/Banana-Loaf-2.jpg 600w, https:\/\/www.suppersfromscratch.com\/wp-content\/uploads\/2013\/06\/Banana-Loaf-2-300x199.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This week I had to do some last minute baking.
