What a perfect summertime lunch or supper. And even better british peas are in season so you can have freshly picked soup! It&#8217;s like waking up in a fairytale where summer is actually real and everything tastes delicious. I new I wanted to do something seasonal, and yesterday I was stuck for lunch and decided to make something out what I already had in the house. You can imagine my joy when I realised I had ingredients for pea and mint soup. If you can&#8217;t imagine &#8211; let me know put it this way I was pretty darn happy.<\/span><\/p>\n<p><!--more--><\/p>\n<p><span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">The best things about this soup &#8211; it is so quick to make. \u00a0Really you have no excuse to buy this, it&#8217;s as quick to make it and when you do it will taste even better. Just watch out for blending disasters ( I managed to splatter this soup everywhere &#8211; luckily I have green walls in my kitchen so I think it blended in &#8211; note to self, buy a new hand blender).<\/span><\/p>\n<p><span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">So rather than waffle on I will just give you the recipe and let you get on with it. Just be careful when blending<\/span><\/p>\n<p><strong><span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">Ingredients\u00a0<\/span><\/strong><\/p>\n<p><span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">1 Onion chopped<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">1 Clove Garlic \u00a0&#8211; finely chopped<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">2 Stalks Celery &#8211; chopped ( doesn&#8217;t celery just make everything taste better &#8211; its the ultimate secret ingredient)<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">1 Potato peeled and chopped ( this isn&#8217;t essential but it will add more body &#8211; you could also use parsnip &#8211; in fact that would be yummy &#8211; do that)<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">600ml Vegetable Stock<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">300g fresh or frozen Peas<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">a handful of Mint chopped<\/span><\/p>\n<p><strong><span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">Method<\/span><\/strong><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">1. Fry the onion, garlic and celery in a pan with some oil, let this soften.\u00a0<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">2. Add in your potato and stir<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">3. Add the stock and leave to simmer for 15 mins<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">4. Add the Peas and Mint leave to simmer for another 5 mins\u00a0<\/span><br \/>\n<span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">5. Remove from the heat and blend (carefully)<\/span><\/p>\n<p><span style=\"font-size: small; font-family: arial, helvetica, sans-serif;\">Et Voila!
