I think salad. Basically lots and lots of green.<\/span><\/p>\n<p><!--more--><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">And for good reason. Things like spinach, rocket and lettuce are amazingly good for you, filled with a load of nutrients and nothing bad. However I also like colour so whilst I have decided salads are now my go to lunch, they need to be good varied salads that I enjoy and want to go back for more.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">For me this about variety and combination. Which means having a wide variety of different foods, in all sorts of combination to ensure I don&#8217;t get board and pack the whole thing in for some brownie.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">This week I have been craving colour \u2013 (did anyone see the snow! I mean come on!) so pepper has been my go to vegetable of choice.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Now I can&#8217;t really claim that this is a recipe. Again it&#8217;s more about giving you a bit of a push to do something different.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">My salad contained:<\/span><\/p>\n<ul>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Spinach Leaves<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Rocket Leaves<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Romaine Lettuce<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Yellow Pepper<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Red Pepper<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Baby Tomatoes<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Celery (I know a lot of people are on the fence about celery but it is a real salad winner in my opinon)<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Apple<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 Carrot<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Walnut halves<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">I then made a dressing with:<\/span><\/p>\n<ul>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">a dash of walnut oil<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">a dash of olive oil<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">\u00bd tsp balsamic vinegar<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">\u00bc tsp mustard<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">\u00bc tsp honey<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">squeeze of lemon<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">pinch of salt and Pepper<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><a href=\"http:\/\/suppersfromscratch.com\/wp-content\/uploads\/2013\/04\/salad-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1363\" alt=\"Salad 2\" src=\"http:\/\/suppersfromscratch.com\/wp-content\/uploads\/2013\/04\/salad-2.jpg?w=490\" width=\"490\" height=\"325\" srcset=\"https:\/\/www.suppersfromscratch.com\/wp-content\/uploads\/2013\/04\/salad-2.jpg 1000w, https:\/\/www.suppersfromscratch.com\/wp-content\/uploads\/2013\/04\/salad-2-300x199.jpg 300w\" sizes=\"(max-width: 490px) 100vw, 490px\" \/><\/a><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">And then chowed down on a very satisfying lunch. It really is that simple. But I think diversity is key, so get some nuts involved to add a new texture, try some beetroot, radish or avocado. What about adding some spring onions to give it a kick or why not add in some fruit. Orange and beetroot make a good combo. And nobody can deny the joy of pear in a Waldorf salad.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Try and keep it veggie to ensure it&#8217;s a real health kick, but experiment. It is the easiest &#8216;cooking&#8217; you can do.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Well, I think I made my point.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Bon Appetite!<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I\u00a0don&#8217;t know about you, but when I think healthy.
