Yes the &#8216;Holidays&#8217; are over and we are all weighing heavy under the prospect of this year&#8217;s resolutions, and the weather does make everything look a bit grey. But despite that, if you look at it the other way we have a whole year ahead of us filled with wonderful seasons and plenty of opportunities to have a go at making things happen. \u00a0We all just need to seek out the sunshine from other places. With this in mind I decided to try and get some sunshine in my cooking just to add a bit of colour to the monotonous malaise that is currently hanging over my house. For me this means an array of bright vegetables, warming spices and a simple quick recipe.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">So here it is &#8211; my January Sunshine Chicken!<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><!--more--><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Ingredients \u00a0<\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 Onion<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 Chicken Breasts chopped into chunks<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 Pepper<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2 Cloves of Garlic<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 Courgette<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 Carrots<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1 tsp Cayenne Pepper<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1\/2 tsp Paprika<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1\/4 tsp Cumin<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">1\/4tsp Tumeric<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Dash of Red Wine<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Dash of Soy Sauce<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Salt and Pepper to taste<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em>Method<\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Chop the garlic and mix with a glug of olive oil and spices, rub on the chicken and leave to marinade for about 15 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Preheat the oven to 180 degrees<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Chop all the vegetables into cubes place in a roasting dish add the chicken, pour on some wine and a dash of soy sauce. Cook for 40-50 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Then serve with a smile<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: helvetica;\"><a href=\"http:\/\/suppersfromscratch.files.wordpress.com\/2013\/01\/sunshine-chicken1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1085\" alt=\"Sunshine Chicken1\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2013\/01\/sunshine-chicken1.jpg\" width=\"490\" height=\"737\" \/><\/a><\/span><\/p>\n<p><span style=\"font-family: helvetica;\">It really is as simple as that.
