Furthermore it looks great cut into simple chunks and wrapped in celophane. And there is nothing I like more than something that looks extravagant with little precision or delicacy.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">So it was decided fudge would make the perfect addition to a few peoples present stash this year.<\/span><br \/>\n<span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> <!--more--><\/span><br \/>\n<span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> Last year I attempted fudge \u2013 a little bit after I melted my thermometer ( if you missed that nightmare you can catch up <a href=\"http:\/\/suppersfromscratch.wordpress.com\/2011\/11\/08\/dairy-queen\/\">here<\/a>). Suffice to say it was not a success \u2013 it didn&#8217;t set. So I approached this challenge with the same trepidation one feels when you go to retake a test you failed. Like your second driving test. And before you accuse me of blowing this out of proportion &#8211; I am not, it is that daunting \u2013 I take my confectionary very seriously!)<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">I won&#8217;t leave you in the dark. This time I cracked it \u2013 as if you couldn\u2019t guess from the above picture.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">As we don&#8217;t have many days till the big event I will give you the recipe so you can crack on.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">I have embellished with my notes to ensure you feel the warm hug of reassurement that you need when braving fudge without a thermometer.<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Right: brace yourselves, here we go&#8230;<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"> <em><strong>Ingredients<\/strong><\/em><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">410g Evaporated milk<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">500g Caster sugar<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">150g Butter<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">2tsp vanilla extract<\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><em><strong>Method<\/strong><\/em><\/span><\/p>\n<ol>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Line an 18&#215;18 inch cake tin with foil and place to one side<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">In a large pan (use the biggest pan you have got \u2013 Fudge can be voluminous) pour in the evaporated milk, caster sugar and butter<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Place on a low heat and stir until all the sugar and butter is combined<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Once combined bring to the boil and continue to boil for 20 mins \u2013 stir all the time ( you don&#8217;t want it to catch and burn)<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">The mixture should thicken and a darker golden colour. When it reaches 115 degrees it is ready to go. If you don&#8217;t have a thermometer (good for you \u2013 you brave person) then get a glass of cold water and drop a small amount of mixture ( just a drop will do) into the glass \u2013 if you can rub it between your fingers and form some sort of soft ball (anything that is solid rather than liquid really) then you are good to go<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Next boil for another 5 mins stirring all the time<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Remove from the heat and leave to cool for 5 mins<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Next beat with a spoon until the mixture looses its gloss and becomes a bit gritty ( this took me about 4\/5mins)<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Then add the vanilla extract and stir<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Spoon mixture into prepared tin and leave to cool<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">After about 20mins cut into squares and leave to cool further<\/span><\/li>\n<li><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Once the mixture has cooled completely you can break off the squares and wrap!<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\"><a href=\"http:\/\/suppersfromscratch.wordpress.com\/2012\/12\/23\/last-minute-food-gifts-vanilla-fudge\/dsc_0966\/\" rel=\"attachment wp-att-1036\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1036\" alt=\"Vanilla Fudge\" src=\"http:\/\/suppersfromscratch.files.wordpress.com\/2012\/12\/dsc_0966.jpg\" width=\"490\" height=\"325\" \/><\/a><\/span><\/p>\n<p><span style=\"font-family: arial,helvetica,sans-serif; font-size: small;\">Simple.
