Simple Suppers: Summertime Stew

How exciting is it that everything  in my title begins with an S, my alliteration is top notch. As is this fish stew. I know you might be thinking “ what the hell is she on about? stew in the summer?” Or “oh, its an English summer which means its cold and it rains.” Well think again my friends, because it is currently sitting at about 27 degrees C and it is a day for ice creams and shorts. (All the wishful thinking must have worked!) Anyway this is so light and scrumptious. Its exactly the sort of dinner you need at the end of a long hot day.

Summer Suppers Take 2

This week my search for simple summer suppers led me towards the joy of a Chicken Kebab. Whilst for many this may be synonymous with the late night/ early morning sobering up meal, for me the Chicken Kebab is summer on a plate – it’s like having a barbecue without having to have the weather or outside space for a barbecue. The crispy chicken, the rich and flavoursome sauces: a match made in tastebud heaven.

There are so many ways to serve a kebab and so many recipes to follow for sauces but I decided that as the brief was quick, delicious and simple that I would stick to the basics. Continue reading

Simple Suppers: Summertime Soup

Following on from my last post about wishful summer thinking, I have been focusing on simple but delicious dishes that can make the perfect light summer supper. ( All part of my plan to encourage some sunshine.)

Hopefully I will be testing a few out over the next few days and weeks all ready to share with you for when the sun does show its beautiful face.

My first attempt has been a spicy tomato and lentil soup. Regular readers will be aware chilli is a big hit in our house so I am always looking to find new ways to get some heat in more interesting flavour combos.

Wishful thinking…

All week I have been planing to do a post today on a delicious healthy sorbet and cooling ice lollies, writing about how they would be perfect for a sunny weekend.

So when I woke up this morning to hear the all too familiar sound of cars rushing through puddles outside and the pitter patter of tiny raindrops on the roof, my heart sunk a little.

When is summer going to arrive?! Let’s face it, everyone could do with the emotions summer brings. It seems when the sun shines we can all be that little bit happier, we take life a little bit slower, we are more sociable, we live more easily and we relax. Summer and all the images of it ( true or not) seems to be associated with fun times, easy living and the good life. So what do we do if the rain doesn’t stop?

A healthier breakfast

In my last blog I mentioned the challenge I had been set by ‘The Father From Scratch’ to create a healthy no carb breakfast option for him.

Now breakfast is my favourite meal of the day and when I look back I am quite shocked at how little I talk about it ( not in general life, more because I write a blog about food). For me the different combinations breakfast can offer are wonderful and I could quite happily have a day eating breakfast, brunch and brinner. The diversity of breakfast is one of its greatest delights so I can understand the frustration of only being able to eat a few different foods.

So as I have already said I am trying to be a bit healthier for lent. This didn’t stop me eyeing up a ice cream shop on my way back home this afternoon. Luckily for my stomach and wallet, it was closed, so no harm done.

Healthy food can sometimes take a bit of a beating from the old taste bud police, because lets face it everything tastes better with butter and salt. It just does.

Common sense: a recipe for success

This is a story about shoving common sense to one side, and blindly following recipes.

As I’ve said before, pasta was a big part of my staple diet before the start of this year, and filled pasta (predominantly tortellini) was the ultimate in lazy. You didn’t even have to make a sauce: just boil some water, drop the parcels in for a few minutes and chuck some grated cheese on top.
