Monday Night and Tuesday Lunchtime

I realised today that what my story needs is a bit of gritty realism in the form of British kitchen sink drama!

Well, really more of a concise look at the reality of eating From Scratch everyday for a year. Not the epic tales of baked goods, the eloquent eulogies of dinner parties, or the devastation of failed chocolate. No. No drama, no comedy, just your average run of the mill tale where you get to peak over the neighbours fence in to the realism of daily life From Scratch.

This tale has two points, and for the sake of my kitchen sink drama theme I won’t beat around the bush:

Point 1. How do you solve the problem of choosing what’s for dinner every night?

Point 2: How do you make sure you eat good food for breakfast, lunch, and dinner during the week when you don’t have so much time?

The answer is simple. Dinner becomes Lunch, and inspiration comes from food websites, recipe books and some cooking shows.

So tonight I wanted light and healthy with a hint of Mexican (this was a mixture of burrito cravings and my love for avocado!)

This specific craving eventually led me to chicken tortilla wraps with guacamole, salsa, and rocket.

From start to finish this took about 30mins – which was interspersed with 15mins of yoga and some washing up (multitasking is paramount in a From Scratch lifestyle!)

As I have previously hinted at flavour is a big challenge with From Scratch, as you need to have the luxury of fresh ingredients that also pack a punch.  To solve this problem, for my chicken I decided on a quick marinade.

So I chopped the chicken and placed it in a bowl with olive oil, salt, pepper, chilli flakes, and lime juice. I then stabbed the chicken a few times with a knife and mixed everything together before getting on with my tortillas. 

I won’t relive the tortilla recipe here but you can find it in it’s entirety in my croissant, tortilla and sourdough blog.

Moving swiftly on, I produced some flavourful wrap additions to make sure my dinner was bursting with flavour.

The first was a rather delicious Guacamole:


1 ripe avocado

1 clove garlic

Handful of coriander

Salt and pepper

Lime juice


  1. Chop up the coriander very finely ( including the stalks) and place in a bowl
  2. Chop your garlic and add to the coriander
  3. Peel, stone and chop your avocado and place in the bowl then mash
  4. Season with salt and pepper and you’re good to go

Next was the Salsa:


2 tomatoes

1 clove garlic

½ red onion

Handful of coriander

Salt and Pepper

Method (you will see this follows a fairly similar theme)

  1. Chop your tomatoes very finely into small chunks
  2. Finely chop coriander, garlic and red onion
  3. Mix everything in a bowl and season

With the accoutrements done, back to the chicken.

Simply fry the chicken – try adding a dollop of honey and a bit more chilli (this was a result of an unforeseen inspiration and you may not like it. But it’s great to experiment and every cooking experience offers you a chance to be creative!)

So once the chicken’s fried, heat the wraps and put everything together.

Simple, but effective

There you have it: my simple Monday night and Tuesday lunchtime recipe.

The glamorous excitement of the From Scratch life eh?!

I have had quite enough gritty realism for now – let’s pick up our From Scratch popcorn and get back to some fairytale jamming, blockbuster battles with food nemeses, and some good old-fashioned baking comedy.
